So I had been seeing the commericals and coupons everywhere for the new Philadelphia Cooking Cream. So I bought some to try out. They say you just add them to chicken and throw in a veggie and toss over some Pasta, so I was willing to give it a try seemed easy enough. I actually bought the Santa Fe flavor and there was a recipe on the container for enchiladas. I copied the recipe from the website but it is on the container too.
Easy Chicken Enchiladas

Ingredients
1 small onion, chopped
2 tsp.oil
3 cups shredded cooked chicken breasts
1 can(14.5 oz.) no-salt-added diced tomatoes, drained
1 tub(10 oz.) PHILADELPHIA Santa Fe Blend Cooking Creme, divided
1/2 cup KRAFT Mexican Style Finely Shredded Four Cheese
8 flour tortillas (6 inch)- I used bigger ones and only made 5. I also used Whole wheat
Directions
Heat oven to 350°F.
Cook and stir onions in hot oil in large skillet on medium heat 4 to 5 min. or until crisp-tender. Stir in chicken, tomatoes, 3/4 cup cooking creme and shredded cheese.
Spoon about 1/3 cup chicken mixture down center of each tortilla; roll up. (I did not put this much in each one or you would only be able to make 3! I just tried to make them all even)
Place in 13x9-inch baking dish sprayed with cooking spray; top with remaining cooking creme. Cover.
Bake 15 to 20 min. or until heated through.
The recipe does not really account for cooking the chicken and shredding it in the time. But I just boiled about 3/4- 1 pound of chicken and then shredded it. I did this before anything else. We don't like onions to much in this house (except Kalen) so I did not add onions, instead I bought a can of tomatoes that had onions and peppers in it. After putting the remaining creme on top of the enchiladas I put more of the shredded cheese on top. These were super yummy and you are able to add or omit things and the recipe is still good. I would recommended either adding some sort of Taco Sauce or Salsa on top and then adding the extra shredded cheese. We did not do this but I plan on doing it next time. I made a side of mexican rice to have with it. Of course I did not take a picture of the finished, right out of the oven product but rather at the end when we had ate most of it.

Fuzzy Bear Hat
I got crafty again and decided to make a hat for the new little man coming in a few short months. I did not have a pattern and just sort of went for it and I realized I am going to have to move the ears forward or you will not be able to see them when I put the hat on my little misters head.

St. Patrick's Day
We went to St. Cloud for two reasons. My hubby was heading to Tampa to go to the NCAA basketball tournament with the boys and I was going to spend some time with my new niece, Grace who was born the Sunday before. On St. Patrick's Day I went with my sister-in-law, Danielle to her moms group party at the park. Kalen loved it he was running around, climbing on everything, trying to eat the rubber they had on the ground of the playground. It was hard to keep him hydrated because he would not stay still long enough to drink anything. I did however get my little mister to sit long enough to eat three servings of pasta salad and a PB&J. I have no clue where this kid stores all this food he scarfs down. We left after about an hour and Kalen almost passed out in the car but I got him to nap at Danielle's for a few hours and then it was back outside to run around. By the end of the day he had dirt everywhere. With all that running around he had a good night sleep. However the next day I think the heat had got to him he hasn't spent that much time outside in one stretch of time. I think he got slightly dehydrated and he was not he usual self Friday morning. But he drank more water and he seemed to be fine by the afternoon. So we headed back to Danielle's so Kalen could play with Blase, his cousin. He has so much fun playing with other kids! He just laughs and runs around.

Grandpa Buddy
My dad, Grandpa Buddy, came up for the day last week to hang out with the Little Mister. He got here while Kalen was napping but after he woke up Kalen had a playmate for the rest of the day. They started playing outside with his Pirate Ship and of course ended up soaked as did I. I was being shot by the water cannon, not by Kalen but my dad.
Then we headed off to lunch at the nice outdoor restaurant on the water here called Blue Gator. I was there the day before with my friend Ashley. Well today Kalen discovered Ranch dressing, Ketchup, and Mustard. The day before I dipped one of Kalen's fries in the Ranch and he just ate it. Well today he kept motioning to my ranch so I let him dip his french fry in. He would suck off the ranch and then want to dip again. So I decided to pour some Ketchup on his own plate, where he decided his french fry was just a tool to get the ketchup in his mouth. Once we added the Mustard to the plate he was no longer using his french fry he was now scooping the ketchup and mustard straight into his mouth. Needless to say it was a good thing this restaurant was outdoors because he was a mess!! He had ketchup and mustard in his hair, neck, eyelids, clothes, pretty much everywhere.
After lunch we headed back home to wait on the hubby to get home so we could go out to dinner later- it seems all we do is eat when people come to visit! After dinner Grandpa Buddy gave Kalen some intense wagon rides! He was having so much fun in the Wagon!

First Haircut!!
On Saturday March 12, 2011 we took Kalen to Disney for the day to get his first haircut at the Harmony Barber shop inside the Magic Kingdom. It was such a wonderful experience and he did amazing, no crying at all. We were a little early for our appointment time, so we played outside the barber shop on Main Street for a little while. When it was time we placed Kalen in the chair and our Barber Rex began loading him up with Mickey stickers to keep him entertained. Then he snipped that first cut of baby hair!! I am shocked I did not cry, although I did cry when I was flipping through the pictures a little later. Kalen sat there like a champ through the cutting. He was more concerned about getting the stickers than what Rex was doing to him. At the end he was awarded his First Mickey ears, which say First Haircut on the back, and a certificate of Bravery for getting his first Haircut. I was awarded a pile of his precious baby hair!!
This was such a great experience for his first Haircut, it was not expensive at all (shocking since it is a Disney thing). You do have to pay to get into the park though, we are lucky enough that Mike's dad works for Disney and are able to go on a pretty regular basis. The Mickey ears are included with the HC. I would recommend calling to make an appointment so you do not have to wait in the walk-in line.

Cocoon
I got a little craft urge the other night and decided to make something for the new baby boy! I made him a Cocoon to sit/ sleep in when I am holding him. It looked exciting and I know he won't fit in it for very long, but I had fun making it! I would curl up into it if I could.

So I have been a little MIA lately. But, nothing to exciting has been going on here. It has been pretty warm so we have been playing outside a lot and we bought Kalen this awesome Pirate Splash table that he just loves. It's out on the back porch and its perfect for hot days because Kalen soaks himself! Here are a few pictures of what we have been doing.
